  • 5.0 out of 5 stars from Albert Kelly -- Fascinating peek at the inner workings of food tech : This book is a trippy journey through the Willy Wonka world of bizarre new foods being invented and marketed by high-tech startups. We're not food tech people. We're food tech curious. Like everyone else, we've started to notice and try futuristic new foods that promise health, diet and sustainability benefits through weird ingredients we've never seen before. The author is understandably skeptical of industry shenanigans. But she left us actually excited about possibilities of things like red seaweed, blue algae, freaky fermented mushroom derivatives and more. Maybe not the mealworms though.   • 5.0 out of 5 stars from mikey d. -- Well written and informative : The author brings a lot of insight into the financing of new food technologies, and the hard work and many years of dedication during the meat-substitute development period. This was a very enjoyable book to read, providing an overview of the many attempts happening at present. It helped me understand that the goal is to create a plant-based convincing replacement for hamburger, chicken fish and steaks. Whether these substitutes can be manufactured with lower carbon emissions than the current state of the beef industry is a big question and hard to answer, as she states due to lack of proprietary info disclosure and of course the patents. Whether the replacement meats would be healthy for you is a another key question. The prevalent use of canola oil and coconut oil in Beyond and Impossible burgers is not a good indicator for healthy products. "Plant based" sounds promising but neither of the burgers (or other meats produced by those two companies) would be called "health food". ( Reviewed in the United States on October 10, 2021 )

The writing in this book is excellent, engaging, and even funny. The research is well done and I am learning a lot about interesting ingredients and the quest for making engineered foods tasty. I also love Zimberoff's sharing about her health and how she has become mindfully attuned to the messages from her body. This book is a winner in that it researches and discusses an interesting topic and is an entertaining and pleasurable read. One personal comment- Alina from Aero Farms is just wrong about no one really loving kale. I love the flavor, texture, color... and I really love chewing it! Author had excellent access to founders, but two pages of good interview content would be followed by six pages of why we don't know if the food is safe, is it really fair to people who can't afford it, why are all these people going to make money based on IP, etc. This is a treatise on what the author believes is wrong with food generally masquerading as a look into the future.
